Summary:

In the present work have accomplished the dissection of the hindlimb from 18 carcass into their major carcass tissues (muscle, fat and bone), in two differents types of Rubia Gallega breed, one of them normal and the other bearing the double muscled character with incomplete expression, called semi double muscle. The animals showed a carcass weight from 162 to 246 kg and they had an average age of 271±20 days.
The main objective of this paper was to determinate the productive yield that the use of this type of crossing supposes. The results we have obtained showed that animals with semi double muscled fenotypes had greater productive yields that normal fenotypes. We have analysed the muscle:bone and muscle:fat ratio, the results were similar to those described by a great number of authors, but they were quantitatively lower, since our animals showed the character in an incomplete way.
The use of this type of animals with semi double muscled fenotypes supposed a mild rise in the productive yields, decreasing the added problems that the total expression carry with.
